A soft and fluffy vanilla Swiss roll cake filled with light whipped cream and topped with pistachios and dried rose petals. 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀: 4 eggs 1 tablespoon honey 60 g sugar (30 g + 30 g) 70 g all-purpose flour 20 g cornstarch 1 packet vanilla sugar (or 1 tsp vanilla extract) A pinch of salt 1 teaspoon baking powder 40 ml milk 15 ml vegetable oil a little powdered sugar (to prevent sticking) Filling & Topping: Whipped cream Chopped pistachios Dried rose petals 𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀: 1. Separate the egg yolks from the egg whites. 2. Beat the egg whites with 30 g sugar until stiff peaks form. 3. In another bowl, beat the egg yolks with the remaining sugar, honey, milk, oil, and vanilla until smooth. 4. Add flour, cornstarch, baking powder, and salt. Mix gently until combined. 5. Fold the whipped egg whites into the batter carefully. 6. Pour the batter into a baking tray lined with parchment paper and spread evenly. 7. Bake in a preheated oven at 170°C (top & bottom heat) for about 15 minutes. 8. While warm, roll the cake with a cloth and let it rest for about 1 hour. 9. Unroll, spread whipped cream, and roll again gently. 10. Decorate with pistachios and rose petals.
