If you want a Slimming World version of a fancy afternoon tea – complete with sandwiches, cakes and treats – here's how you can do it piled high with lots of Slimming World Free food and for only 10 Syns. Free-filling sandwiches Made from 60g wholemeal bread (Healthy Extra ‘b’ choice) and your choice of Free filling: Canned or smoked salmon and cucumber Sliced lean roast beef (if you like, add English mustard for ½ Syn per level tsp) Lean ham Chopped hard-boiled egg mixed with cress (if you like, add fat-free natural fromage frais for Free, or extra-light mayo for 1 Syn per level tbsp) Veggies & salad Add lots of Speed food with fresh salad leaves, tomatoes and red onion. Add in crudités like carrot sticks, chopped pepper and mange tout. Or make a more substantial salad, with mixed beans, pasta or rice. Add in Protein rich Free food like hard boiled eggs, tuna or minted courgettes topped with vegan houmous 3 medium courgettes, ends removed and halved lengthways Low-calorie cooking spray Small handful of fresh mint, finely chopped For the houmous: 400g can chickpeas, drained and rinsed 1 garlic clove, crushed 2 tbsp lemon juice from unwaxed lemons, plus extra to taste 3 tbsp dairy-free soya yogurt, plain and unsweetened, with added calcium Put the chickpeas, garlic, lemon juice and yogurt in your food processor and whizz until fairly smooth. Season lightly and add more lemon juice to taste. Griddle the courgettes halves and leave to cool and dollop a little houmous on to each piece. Scatter over the remaining mint and season lightly with salt to serve. Fresh fruit Serve up some fresh fruit skewers with sliced melon, strawberries, grapes, kiwi and pineapple. Or serve fruit in a fancy glass for a special touch to your tea. Low Syn sweet treats Blueberry and lemon cheesecake jars (5 Syns per serving) • Slimming World blueberry and lemon cheesec... Orange and raspberry bites (2½ Syns per serving) • Slimming World orange and raspberry cakes-... Strawberry and black pepper meringues (2½ Syns per serving) 4 large strawberries, hulled 4 large egg whites 120g caster sugar 1 tsp cream of tartar 1 level tbsp freeze-dried strawberries ¼ tsp coarsely ground black pepper, plus extra to decorate 2-3 tsp natural red food colouring Preheat your oven to 110°C/ fan 90°C/gas ¼ and line 2 large baking trays with baking paper. Whizz the strawberries in a food processor until smooth. Push through a fine sieve into a bowl and discard the seeds. Put the egg whites in a large, clean glass bowl and beat with an electric hand whisk on a medium speed until they form stiff peaks. Turn the speed to high and add the sugar a spoonful at a time, whisking for 3-4 seconds between each spoonful; when all the sugar has been added the mixture should be thick, glossy and smooth. Whisk in the cream of tartar. Swirl the strawberry purée, half the freeze-dried strawberries and the black pepper into the meringue. Turn a disposable piping bag inside out and, using a clean paintbrush, paint stripes of the food colouring on the inside. Fill the piping bag with the meringue, ensuring there are no air bubbles, and snip off the tip to the size of a £2 coin. Pipe 10 meringues onto the prepared baking trays, leaving 2cm between each one. Sprinkle the remaining freeze-dried strawberries on top and grind over some black pepper. Bake for 80-90 minutes, until the meringues are crisp. Transfer to a wire rack to cool. Grind over more black pepper to serve.
