Elevate your Valentine’s Day dinner with a dish that tastes like a high-end Italian bistro, right in your own kitchen! 🥂✨ In today’s video, I’m showing you how to make a delicious Roasted Red Pepper Sauce served over pan-fried gnocchi and crumbled sausage. As a classically trained pastry chef and cook, I believe the secret to a perfect meal is the balance of flavors and, of course, the perfect wine! To round out this romantic meal, we are pairing it with the Brancaia Tre Toscana. This Sangiovese-based blend has the structure and acidity to cut through the richness of the red pepper sauce while complementing the sausage and gnocchi. What you’ll learn in this video: How to achieve the perfect golden-brown crust on store-bought or handmade gnocchi. -The secret to a silky, vibrant roasted red pepper sauce. -Why the Brancaia Tre is the ultimate pairing for tomato and pepper-based dishes. 🥗 Ingredients & Steps -2 red bell peppers -1/2 large Vidalia onion -1/4 cup sour cream -1 tablespoon tomato paste -Extra virgin olive oil -1/6 cup grated Parmesan cheese -Garlic powder -Salt/pepper to taste -Red pepper flakes optional -1 cup Chicken stock (optional to add more if you want a looser style sauce) -1 lb pork sausage taken out of casing -1 bag Giovanni Rana Skillet gnocchi (1 bag is 2 portions - the sauce will make enough for 4 portions, so get 2 bags for a family of 4 or if you want to make it for 2 nights) Add peppers and onions to a sheet pan and drizzle olive oil and sprinkle with salt. Roast peppers and onions for 45 minutes on 375 degrees until skins or peppers blacken and onion is soft to the touch and browned. Remove skins from peppers and add peppers and onions to an emulsifier safe container. Add sour cream and about a half cup of chicken stock and emulsify until smooth. Cook sausage and break it into crumbles and set aside (I also drained the fat from the pan). Heat a medium sized skillet and add 1 TBS tomato paste with a drizzle of olive oil. Once warmed whisk in the emulsified peppers and onions. Add another half cup of chicken stock, whisk in 1/6 Parmesan cheese, season to taste with garlic powder, salt, pepper and red pepper flakes. Let cook for 5-10 minutes on low heat. Combine with crumbled sausage. Follow instructions for skillet gnocchi on bag and get them nice and golden brown! Once gnocchi are finished, top with red pepper and sausage sauce, more Parmesan cheese, cracked black pepper and more red pepper flakes and serve!
