Today, we’re taking it to the next level with a professional Pinot Grigio pairing. 🥣🥂 In today’s episode, I’ll show you how to get a rich, velvety texture without heavy cream and why a crisp, acidic Pinot Grigio is the best wine to balance the earthy flavors of white beans and rosemary. Skip the guesswork and learn how to pair wine with soup like a pro. 🍷 THE PAIRING NOTES: The Wine: Pinot Grigio (Jermann Pinot Grigio from Friuli) The Why: The citrus notes in the wine pair perfectly with the lemon zest in our soup. 📍 CHAPTERS: 0:00 Intro, pairing, cozy cold weather soup that feeds a family of 4 1:15 Dicing the onion 2:36 Mincing the garlic 3:51 Cooking the onions 4:04 Preparing the sausage 5:19 Zesting the lemon 6:53 Deglazing the dutch oven 7:10 Adding the cannellini beans & chicken stock 7:46 Adding Kale and Seasoning 8:50 Adding Ditalini pasta 9:18 Pinot Grigio Wine Pairing 10:39 First Taste! 📋 THE RECIPE: Easy weeknight dinner: Cannellini Bean and Chicken Sausage Soup 1 package chicken sausage (about a pound)- taken out of casing 1/2 large onion (diced) 2 cloves garlic (crushed) 2 tbs olive oil 4 cups (1 box) chicken stock, I highly recommend wegmans brand! Zest half of lemon Juice half of lemon 1 chicken bullion cube 2 cans cannellini beans 5oz fresh kale, Tuscan or Baby Optional 1/4-1/2 cup ditalini (keep in mind the pasta soaks up broth so you may want a little extra broth if you add pasta!) Season with pepper, rosemary, parsley, Italian seasoning- taste before adding salt! The stock and the bouillon cube are salty enough- I don’t add additional salt. 1 In Dutch oven or large pot, heat olive oil and add onions and garlic. 2 Let onions and garlic cook until translucent, then add chicken sausage. Chop while mixing, so the chicken crumbles. 3 Once chicken is fully cooked, add lemon zest and lemon juice to deglaze the pot. 4 Add cannellini beans, chicken stock, chicken bouillon, kale and if using ditalini, add that in as well. 5 Cook on medium heat until ditalini is al dente- 10-12 minutes, make sure to stir occasionally to break up bouillon cube (keep in mind if adding pasta- you may need to add more stock so have some more on the side just in case!) 6 Add seasoning (rosemary, parsley, pepper and a little Italian seasoning) to taste 7 Serve with Parmesan cheese, fresh pepper and red pepper flakes! 8 Make crusty garlic bread on the side for the perfect dipper! ✨ TOOLS I USE: Dutch Oven: https://www.amazon.com/dp/B0BXLZMV4B?...
