Fried Chicken Sandwich with Spicy Garlic Mayo & Pickle Jalapeño Slaw Serves: 6 Prep Time: 30 minutes Cook Time: 25 minutes Total Time: ~55 minutes Spicy Garlic Mayo Ingredients: • 1 cup mayonnaise • 3 cloves garlic, crushed • 3 tablespoons hot sauce Directions: 1. In a small bowl, combine mayonnaise, crushed garlic, and hot sauce. 2. Mix until smooth. 3. Cover and refrigerate until ready to use. Coleslaw with Pickles & Jalapeño Ingredients: • 6 cups green cabbage, thinly sliced • I red onion, thinly sliced • 2-3 jalapeños, thinly sliced • 1½ cups chopped bread and butter pickles • I cup bread and butter pickle juice Directions: 1. In a large mixing bowl, combine cabbage, onion, jalapeños, and chopped pickles. 2. Pour pickle juice over the mixture and toss well to coat. 3. Let sit for at least 15 minutes to lightly pickle and soften the cabbage. Crispy Fried Chicken Ingredients: • 6 thinly sliced boneless, skinless chicken breasts • Dredge: • 2 cups all-purpose flour • 1 tablespoon kosher salt • 1 tablespoon onion powder • 1 tablespoon freshly ground black pepper • 1½ cups buttermilk • Vegetable oil, for frying Directions: 1. In one bowl, whisk together flour, salt, onion powder, and pepper. 2. In another bowl, pour in buttermilk. 3. Dredge chicken in flour mixture, dip each chicken breast in the buttermilk, then again dredge in the seasoned flour, pressing lightly so the coating sticks. 4. Heat about 1 inch of vegetable oil in a deep skillet to 350°F (175°C). 5. Fry chicken in batches for 3-4 minutes per side, or until golden brown and internal temperature reaches 165°F (74°C). 6. Transfer to a wire rack to drain excess oil and sprinkle with a little more kosher salt Assembly Ingredients: • 6 brioche buns • Mayo spread (from above) • Fried chicken pieces • Pickle-jalapeño coleslaw Directions: 1. Lightly grill or toast brioche buns. Spread a thin layer of mayo on each side before toasting for extra flavor. 2. To assemble: • Spread spicy garlic mayo on both sides of each bun. • Add a piece of fried chicken. • Top generously with the pickle-jalapeño coleslaw. 3.
