PIZZA SAUCE 2 garlic cloves 1 tbsp olive oil 1 33.05 oz. Tomato sauce 1 tsp salt 1/8 tsp pepper 1/2 cup water 2 basil leaves 1. Start by crushing 2 garlic cloves and set them aside (this resting time will allow the garlic to release its aroma). 2. In a sauce pan, heat up 1 tbsp of olive oil at medium heat. When the oil is warm, you’ll notice the oil changing consistency, from dense to slightly runny. Be careful to not let the oil heat up so much that it begins to smoke - if you reach the smoke point it will be close to burning and then you will have to start all over again. 3. Add the garlic, move the pan off the stove. Tilt the pan so the oil pools, allowing the garlic to infuse the warm oil. You should see tiny bubbles around the garlic. Let it infuse the oil for a couple minutes. 4. For this step, keep the pan off the stove so you avoid a big splash of tomato sauce and oil all over your kitchen and yourself. Add the tomato sauce, salt, and pepper. Stir everything together. 5. Put the pan back on the stove on medium-low heat, add half cup of water, then bring it to a simmer. Cover it with a lid and let it cook for 20 minutes. Stir occasionally to keep the sauce from sticking to the bottom of the pan. 6. Everybody’s stove is different, so after 20 minutes, check the consistency of the sauce. If it’s too runny, let it simmer until it’s right. If it’s too thick, add a half cup of water, stir it, then check again. 7. Once the sauce is the right consistency, turn the stove off and stir the basil in. Let it infuse for a minimum of 10 minutes (adding the basil at the end will prevent it from burning and becoming bitter). Your sauce is ready to use or you can store it in the fridge (for no more than 5 days). If you decide to refrigerate your sauce, keep the basil and garlic in for a more intense flavor.
