These turkey croquettes are made entirely from pantry and leftover items, and best of all they are QUICK to make! You can use up your leftover turkey with this recipe in 30 minutes! I found them extremely filling, but that didn't stop me from eating two of the four before dinnertime. If you don't have leftover turkey, you could also use leftover roast chicken, or even pork (so says my fiancé...) In our household, anything and everything tastes great in white sauce! INGREDIENTS: 2 tablespoons butter or margarine ¼ cup all purpose flour 2/3 cup milk or chicken stock Seasoning (salt and pepper) 1 ½ cups chopped, cooked turkey 1 egg Toasted bread crumbs Fat for frying Asparagus tips for garnishing METHOD: Make a thick white sauce with the butter, flour and milk and season well. Add the chopped turkey and allow mixture to cool slightly. Form into croquette shapes. Coat in egg and crumbs. Fry in shallow fat until crisp and golden brown on each side. Garnish with asparagus tips. Serves 4.
