Homopolysaccharides consist of repeated identical sugar units and include substances such as starch, dextrins, glycogen, cellulose, inulin, and dextrans. Heteropolysaccharides contain repeated different sugar units and include glycosaminoglycans (GAGs) like hyaluronic acid, chondroitin 4- and 6-sulfate, keratan sulfate, dermatan sulfate, heparin sulfate, and heparan sulfate. Starch, also known as glucosan or glucan, is a major carbohydrate in our diet and is composed of an inner layer called amylose and an outer layer called amylopectin. Starch is found in cereals, potatoes, legumes, and other vegetables and is responsible for about 60% of our daily carbohydrate intake. Partial hydrolysis of starch by the enzyme amylase produces various forms of dextrins, which are simpler than starch. Glycogen, or animal starch, is a homopolysaccharide made up of branched alpha-D glucose units and serves as a storage form of glucose in the liver and muscles. Cellulose, on the other hand, is a long, straight, non-branching chain of beta-glucose units and forms the structural framework of plants. It is insoluble in water and cannot be digested by many mammals, including humans. Despite its indigestibility, cellulose is important in the diet as it provides bulk to stool and promotes intestinal movement, preventing constipation. It is also a component of dietary fibers, which help reduce the absorption of toxic compounds and lower the incidence of colon cancer. Inulin is a fructosan composed of repeated units of fructose and is found in the roots of artichokes and other plants. It is used as a diagnostic test for investigating glomerular filtration rate. Dextrans are branched chain homopolysaccharides composed of glucose units linked together by 1-3 and 1-6 glycosidic bonds.
