Subscribe! / onehungrymama For more school lunch ideas and inspiration, be sure to check out my full series of school lunch videos: • School Lunch GREEK-STYLE CUCUMBER YOGURT DIP Plain Greek-style yogurt Cucumber, peeled and finely diced Fresh lemon juice Salt Minced fresh garlic (optional) Olive oil (optional) 1. Combine all ingredients to taste. If you want this to have a smooth texture, use a little less cucumber and consider grating it instead of chopping. If you prefer a chunky texture, use more cucumber. 2. Add lemon juice and salt little by little, tasting all the while, until you achieve desired taste. Same with the garlic if using, but keep in mind that I never use more than 1 small clove to combine with 1 cup of yogurt. Finish with a drizzle of olive oil. RED PEPPER HUMMUS Plain hummus (or the ingredients to make your own!) A jar of roasted red peppers 1. Puree 1-2 whole roasted red peppers (depending on your taste) into any hummus recipe that calls for one 15-ounce can of garbanzo beans. You can also puree the peppers into a pre-made package of hummus. PEANUT BUTTER SNACK DIP Makes 3/4 cups 1/2 cup creamy peanut butter 1/4 cup whipped cream cheese 2 tablespoons honey* 3 tablespoons apple juice or cider 1. Add all of the ingredients to a bowl and use an electric mixer to combine. Keep mixing until the mixture takes on a soft, creamy consistency. Serve or store in a sealed container in the refrigerator for up to 2 weeks. Honey is unsafe for children under 1-years-old due to the risk of botulism.
