Turmeric 3/4 tspn Red Chilly powder 1 tspn Chopped Coriander 1 tbspn Curry leaves 10-12 nos Chopped Green Chillies 1 tspn Oil •Method : Chop brinjals in bite sized pieces. Apply turmeric & salt and keep aside for 3 mins. Make a fine paste with mustard seeds, garlic, ginger , curry powder, sugar, vinegar and salt. Keep Aside. -Coconut Roti: Make a soft dough with wheat flour, grated coconut , chopped onion , red chilly powder , turmeric and salt. Keep the dough aside. Make small portions with the dough . Flatten into small rotis on a plastic sheet / aluminium foil and roast them on tawa with some ghee. -Pahi: Heat oil. Squeeze the marinated brinjal and deep fry until light golden Chop the onion into dices. Deep fry in the same oil until transclucent. Fry curry leaves and green chillies in the same oil. Make a fine paste with mustard seeds, garlic, ginger , curry powder, sugar, vinegar and salt. Keep Aside. In a thick bottom pan cook the above made paste with some water & without any oil. The gravy will take 4-5 mins to cook. Switch off the flame and add the fried brinjal , onion, curry leaves and chillies. Mix well.
