These paniyarams are made with the goodness of bajra, sooji & a mix of vegetables. It makes for a healthy breakfast for all! BAJRA PANIYARAM Ingredients 1½ cups pearl millet (bajra) flour ½ cup semolina (rawa) Salt to taste ½ cup yogurt 1 medium onion 1 small carrot ½ cup boiled green peas ¼ cup chopped fresh coriander leaves 1 green chilli, chopped 2 tsps fruit salt Coconut chutney to serve Method 1. Mix together pearl millet flour, semolina, salt and yogurt in a bowl. Add 1½ cups water and whisk till a smooth batter is formed. Set aside for 20 minutes. 2. Finely chop the onion. Grate the carrot. 3. Coarsely crush the boiled green peas in a blender jar. Transfer into the prepared batter. Add coriander leaves, green chilli, chopped onion and grated carrot. Add ¼ cup water and adjust salt, mix till well combined. Set aside for 5-10 minutes. 4. Add fruit salt and lightly mix till well combined. 5. Heat a non-stick paniyaram pan. Add some oil into individual cavity of the pan. Pour a portion of the batter into each cavity till ¾ filled. Cover and cook on medium heat for 5-6 minutes. 6. Flip each paniyaram and cook the other side for 2-3 minutes. 7. Serve hot with coconut chutney.
