In this time of lock down and working from home with no maids to help, one pot dishes like these come handy. I'll be sharing what i make in a day in the hope that it helps you in planning your meals also. Ingredients ½ cup chopped tomatoes 3 cups chopped fenugreek leaves 2 tsp oil 1 bayleaf 2 cloves 2 pieces cinnamon 2 cardamoms 2 tsp finely chopped green chilli ¼ cup onion paste 2 tsp garlic paste 1 tbsp coriander- cumin powder ½ tsp turmeric 2 tsp red chilli powder 3 cups cooked, basmati rice Method 1. Heat oil in a pan on medium flame and once hot add the bay leaf, cloves, cinnamon and cardamoms and allow them to give out their aroma. 2. Now add in the green chilli and onion paste. Cook the onion paste until it turns brown in colour. 3. Add the garlic paste a saute for a few minutes. Add the tomatoes and cook till they soften. 4. Now add the coriander-cumin powder, red chilli powder and turmeric along with 2 tbsp water and cook for few seconds. 5. Add the fenugreek leaves and mix well and allow it to cook for 3-4 min until they are done. 6. Mix in the rice and salt to taste and allow it to cook for another 3-4 min. 7. Serve hot with raita.
