Be sure to follow her here: / winniesbakery Ingredients: 4 cup gluten-free flour 1/4 cup fine grated parmesan 1 tbsp baking powder 1 1/2 tsp salt 1 cup cold butter (cubed) 10 oz buttermilk Herbs: parsley, sage, rosemary, thyme Cooking Instructions: In a large bowl, whisk together flour, parmesan, baking powder, and salt. Place the cubed butter into the bowl of dry ingredients. Make sure all the butter is coated with the dry mix. Using hands, firmly press the pads of butter—working them into the dough until the butter is roughly the size of either peas/beans. Using a silicone spatula, fold buttermilk into the flour mixture, creating a very moist, yet crumbly dough—trust the process. Mix until the buttermilk is absorbed. Lightly flour a work surface. Pour the dough out atop. With lightly floured hands, shape into a rectangle and press the dough down—until about 1” thick. Do a faux-book fold (fold inward by 3). Then, using a bench scraper or sharp knife, cut the dough in half—across the width. Stack the dough pieces atop one another. Again, press the dough down into a 1” thick, rectangular shape. This time, ONLY fold the dough in half and cutting, stacking, and pressing one more time. Preheat the oven to 400° and line a baking sheet with parchment paper. On top of a flipped over baking sheet, roll the finished dough to about 3/4” thick. Place in the fridge for 30 mins to “rest”. Remove from the fridge, slide the chilled dough onto a piece of parchment (laid atop the work surface) and box-cut into 2”x2” squares. Then, place on a prepared baking sheet. Brush with a bit of additional buttermilk and press the prepared herbed on top. Bake in the oven for 15 to 20 minutes until the biscuit top is golden-brown Eat - warm - and enjoy!
