Chicken Marination Boneless chicken – 1 kg Salt – ½ tbsp Black pepper – ½ tbsp Soya sauce – 3 tbsp Chilli sauce – 3 tbsp Maida (all-purpose flour) – 3 tbsp Cornflour – 3 tbsp 2. Chicken Preparation Salt – ½ tbsp Black pepper – ½ tbsp White pepper – ½ tbsp Sugar – 1 tbsp Soya sauce – 3 tbsp Garlic chilli sauce – 3 tbsp Garlic paste – 1½ tbsp Spring onions – 2 tbsp (chopped) Green chillies – 2–3 (sliced) Chicken stock (yakhni) – 1 cup Oil – as required 3. Fried Rice Rice – 2½ cups (soaked for 20–25 minutes) Salt – ½ tbsp Black pepper – ½ tbsp Soya sauce – 2 tbsp Carrots – 2 medium (finely chopped) Cabbage – 1 small (shredded) Spring onions – 2 tbsp (chopped) Eggs – 3 (scrambled) Food color (zirda rang) – a pinch (optional) Oil – as required Method Step 1: Marinate the Chicken In a bowl, add chicken pieces along with salt, black pepper, soya sauce, chilli sauce, maida, and cornflour. Mix everything well until the chicken is evenly coated. Let it marinate for at least 30 minutes. Step 2: Fry the Chicken Heat oil in a pan and fry the marinated chicken until golden and crispy. Remove and set aside. Step 3: Prepare the Chicken Sauce In the same pan, add a little oil. Add garlic paste and green chillies — sauté until golden brown. Now add the fried chicken, followed by salt, black pepper, white pepper, sugar, soya sauce, and garlic chilli sauce. Mix well so that the chicken is evenly coated with the sauces. Add chicken stock (yakhni) and cook on medium flame for 5–6 minutes until the sauce thickens slightly. Finally, sprinkle chopped spring onions and turn off the flame. Step 4: Prepare the Fried Rice Boil the soaked rice until 90% done, then strain and set aside. In a separate pan, heat oil and add chopped carrots and cabbage. Stir-fry for 2–3 minutes. Add salt, black pepper, and soya sauce. Mix well. Add the scrambled eggs and combine everything. Now add the boiled rice and mix gently. Sprinkle spring onions and a pinch of food color (zirda rang) for color. Cover and cook on low flame for 5 minutes. Step 5: Serve Serve the Spicy Garlic Chicken hot with Fried Rice. Garnish with extra spring onions and sliced green chillies for a restaurant-style finish.
