Ingredients: 1 kg golden sella basmati rice 600g granulated sugar 200g butter 100g glaced cherries 40g raisins 40g coconut slices 40g blanched almonds 2 tbsp kewra water (pine essence) 1 tbsp desiccated coconut 5 green cardamom Zest of an orange 1 tbsp food colouring (red/pink, green, yellow/orange) Method: -Wash and soak rice for couple of hours -Boil a few litres of water in a pan. -Add kewra water (pine essence), half zest of orange, cardamoms, then cover the pan until the water reaches boil. -Add the rice to the pan. -Boil for 10-15 minutes approx, drain with cool water then set aside. -Melt the butter in a pan then add sugar to the melted butter. -Once combined add half zest of orange, raisins, almonds and coconut slices. *Sprinkle water at intervals to avoid caramelisation. -Cook until the raisins puff up. -Pour this mixture over the boiled rice then cook on high heat until water evaporates. -Add cherries -Add 1 tbsp of each colour in 3 different areas of the rice and sprinkle rice with desiccated coconut. -Cover and place in oven at gas mark 4 / 180°C for 15-20 minutes. -Stir to combine colours -Enjoy!
