Farmers Omelette Casserole Ingredients (most ingredients are estimated): Casserole: Butter - 1 tablespoon Eggs - 9 large Cottage cheese - 1 cup Mild Sausage - 3/4 lbs Red Pepper - 1 whole Heavy Cream - 1/4 cup Shredded cheese - 2 cups (one whole bag) Avocado oil - 1 tablespoon Salt Pepper Smoked Paprika Tater Tots - Half a Bag Avocado oil - 1 tablespoon Air fried at 360 for 15 minutes Gravy: Salted butter - 3 tablespoons Mild Sausage - 1/4 lbs Corn Starch - 2 tablespoons Heavy cream - 1/3 cup Milk - 2 cups Oregano Thyme Black pepper Salt Smoked Paprika Paprika Optional: dash of crushed red pepper flakes Cook sausage and red pepper, put aside. Grease pan with butter and avocado oil before adding the eggs, ensuring to break the yolks upon introduction to the pan. (Optional: pre-mix eggs, cottage cheese and heavy cream before adding to the pan.) Add heavy cream, cottage cheese, and seasonings, mix well. Split mixture in half, setting aside with the cooked peppers and onions, place pan on medium heat and cover to allow bottom layer to cook slightly. Take 1/4 pound of the cooked sausage and add to a separate pan, with corn starch and butter. Add heavy cream, milk and seasonings, place on medium/low heat, cover and allow to thicken. Stirring occasionally. Cook frozen tater tots in air fryer at 360 for about 15-20 minutes. Once bottom half of eggs is somewhat solid, add shredded cheese, and the remainders of the eggs and sausage/pepper mix, topping with more shredded cheese before reseasoning and adding the lid to allow to finish cooking. Once cooked fully add the tater tots to the top of the egg casserole followed by more shredded cheese, allow cheese to melt before adding the gravy to finish off the top.
