High Protein Instant Dosa made with Lobia & Palak | No Fermentation Healthy, soft dosa bites perfect for kids’ lunchbox and busy mornings. In this video, I share my easy Lobia Palak Dosa Bites recipe using black-eyed beans, spinach, and paneer with a delicious aloo-paneer filling. This instant dosa needs no fermentation and is a great healthy Indian breakfast or lunchbox. 📝 INGREDIENTS ( Makes 6-7 Dosas) ▶ For Lobia Palak Dosa Batter • 1 cup lobia / black-eyed beans (soaked overnight) • ½ cup rava / suji • 1/2 cup curd ( if thick- add 1/4 cup) • 1 cup palak (spinach) leaves • 1–2 green chillies • 1 inch ginger • ~1 cup water (adjust as needed) • ¼ cup rice flour • 2 tsp coriander powder • ¼ tsp garam masala • A pinch hing (asafoetida) • Salt to taste ▶ For Aloo Paneer Filling • 2 tsp oil • ½ tsp cumin seeds • 1 onion, finely chopped • Green chillies (optional) • ¼ tsp coriander powder • Red chilli powder (optional) • 3–4 boiled potatoes, mashed • ½ cup crumbled paneer • Salt to taste • Fresh coriander leaves ▶ For Topping (Optional) • Homemade ketchup / sauce • Grated carrot • Extra paneer • Cheese (optional, kids love it) 👩🍳 Method Blend soaked lobia, rava, curd, palak, green chilli, ginger & water to a smooth batter. Add rice flour, salt & spices. Rest for 10 minutes. Prepare filling by sautéing cumin, onion & chillies. Add boiled potatoes, paneer, salt & coriander. Mix well. Spread batter on hot tawa and cook soft. Add sauce, filling, veggies, paneer/cheese.
