Give a steam cook. Let it cool and mix second marination ingredients, keep for 15 minute. Cook in hot oil. Serve with serving ingredients. Mutton Masala Biryani: Ingredients for Masala: Mutton 600 gm Ginger Garlic Paste 1-1/2 tbsp Salt 1-1/2 tsp Red Chilli Powder 1 tbsp Turmeric ½ tsp Coriander Powder 1 tbsp Whole all spices 1 tbsp Onion (chopped) 2 Tomatoes 2 Ingredients for Rice: Rice (boiled) 500 gm Mix all spice 1 tbsp Bay Leaf 1 Ingredients: Coriander Leaves 1 bunch Mint Leaves ½ bunch Green Chilies 7-8 Lemon Slices 6-8 Plums 8-10 Yogurt ¾ cup Fried Onion ½ cup Clarified butter ¾ cup Yellow Food Color as required Nutmeg, Mace Powder ½ tsp Screwpine Water 1-1/2 tsp Tomatoes 2 In a mutton, add ginger garlic paste, salt, red chillies, turmeric, coriander powder,whole mix garam masala, onion, tomatoes, water and cook until mutton is done and 3 cup of stock are left. Now add this mixture into pan, take it out 2 cup of stock. Then add coriander leaves, mint leaves, tomatoes, green chillies, nutmeg, mace powder, soaked plums, kewra water, fried onion, yellow food color, yogurt and mix. Then add mix garam masala , bay leaf and boiled rice. After this, heat ghee add remaining stock. Add yellow food color and let it simmer for few minutes , then take it out. Gil Firdous: Ingredients: Milk 1-1/2 liter Soaked rice ½ cup Clarified butter 4 tbsp Almonds peeled 10-12 Cardamoms small 2-3 Pineapple crushed ½ cup Pineapple cubes ½ cup Whole clarified butter ½ cup Sugar ¾ cup Vanilla essence few drops Pistachios for garnish Rose leaves for garnish Method: In pan add rice cook with clarified butter. Blend rice with almonds, cardamoms and half cup of milk. Add in boiled milk cook till it becomes thick. When it turns thick add sugar, cook. Add whole dried milk, crushed pineapples, pineapple cubes and vanilla essence. Garnish with pistachios and rose leaves, serve.
