Everybody loves a good steak but nailing the perfect steak dinner is so much easier than most people realize! This can be thrown together in less than 45 minutes and will stand out as memorable and likely better than any restaurant you will book this weekend! I love a good ribeye but I think that this recipe also works exceptionally well with a NY strip steak! PAN-SEARED STEAK + GARLIC HERB PARMESAN CREAM SAUCE (with crispy twice-fried fries) Ingredients • 2–4 steaks • Kosher salt + fresh black pepper • 1 Tbsp ghee/tallow/oil • 2–3 Tbsp butter • 4–5 garlic cloves, smashed • Small bunch thyme • Small bunch rosemary Sauce • 1 shallot, minced • Optional ⅓ cup sliced mushrooms • ¼ cup dry white wine • ¼ cup beef broth • ½ cup heavy cream • ⅓–½ cup finely shredded parmesan • 1–2 tsp lemon juice or sherry vinegar • Black pepper + salt (to taste) Fries • 2–3 large russet potatoes, thin cut • Oil + fine salt 1. Cut potatoes into very thin fries. Fry at 300–325°F for 3–5 min until soft and pale. Remove and spread out to cool. 2. Pat steaks dry. Season generously with kosher salt. Preheat pan very hot. Add ghee. 3. Sear steaks 2½–4 min per side until deep crust forms. 4. Lower heat. Add butter, garlic, thyme + rosemary. Baste until internal temp: • ~118°F (medium-rare) • ~125–130°F (medium) 5. Remove steaks and rest 5–10 min. 6. In same pan, sauté mushrooms first (if using) until browned. Add shallot and cook 30–60 sec. 7. Add ¼ cup white wine. Reduce almost completely dry. 8. Add ¼ cup beef broth. Reduce by half. 9. Add ½ cup cream. Simmer 3–5 min until slightly thick. 10. Remove from heat. Whisk in parmesan until smooth. Finish with lemon (or vinegar), black pepper, and salt if needed. 11. Final fry potatoes at 375–400°F for 2–3 min until golden and crispy. Salt immediately. 12. Slice steak. Spoon sauce over top. Serve with fries.
