Welcome back to With Love, Alandra! This pecan pie is one of those recipes that makes the whole house smell like the holiday season. It is rich, gooey and so easy to make (even if you're new to baking). This recipe is everything I love about baking this time of year: classic ingredients, simple steps and a dessert that feels like a hug. INGREDIENTS | 300 grams Pecans 75 grams Butter, softened 100 grams Sugar 110 grams Dark Brown Sugar 1 Cup Corn Syrup 1/2 teaspoon Salt 3 Eggs, Room Temperature 1 teaspoon Vanilla Paste DIRECTIONS | 1. Roll out a single pie crust and line a 9.5-inch pie dish with it. Transfer back to fridge to chill while preparing the pie filling. 2. Preheat the oven to 425ºF. Adjust the oven rack to the middle position if needed. 3. Prep the pecans: chop them into medium and/or small pieces. I like leaving some bigger chunks for texture, but cut them to your preferred size. 4. Make the pie filling: In a stand mixer, cream together the butter, sugar, brown sugar, corn syrup and salt until smooth. Add the eggs one at a time, mixing well after each addition. Mix in the vanilla paste until fully combined. 5. Stir in the pecans by hand, making sure they are coated and evenly distributed. 6. Pour the filling into the chilled pie crust. 7. Bake at 425ºF for 10 minutes. 8. Reduce the oven temperature to 350ºF and bake for an additional 50 minutes until center is fully set. Keep an eye on the crust and tent with foil if it begins to brown too quickly. 9. Remove from the oven and let the pie cool on the counter for at last 3 hours so the filling can fully set. 10.
