Brinjal Chilli Masala (Indo-Chinese Style) @GlobalWithOdia Ingredients (4 people) • Green–white brinjal – 3 medium (cut into 1 cm slices) • Cornflour – 4 tbsp • Maida – 3 tbsp • Turmeric – ½ tsp • Red chilli powder – 1 tsp • Ginger-garlic paste – 2 tsp • Salt – taste anusare • Oil – frying pain (approx 300 ml) • Onion – 1 medium (cut into cube size) • Capsicum – 1 medium (cube size) • Tomato – 1 medium (cube size) • Green chillies – 2 slit • Curry leaves – optional • Tomato ketchup – 2 tbsp • Red chilli sauce – 1 tbsp • Soya sauce – 1 tbsp • Garam masala – 1 tsp • Coriander leaves – garnish pain 👩🍳 Step-by-Step Cooking • 1. Cutting & Prepping • Cut the brinjal into medium-thick slices. • Sprinkle salt and keep aside for 5 minutes to release excess water. 2. Batter & Frying • Prepare the batter: cornflour + all-purpose flour (maida) + turmeric + red chilli powder + ginger-garlic paste + salt + little water. • Dip the brinjal slices in the batter and fry until golden brown and crispy. • Place on tissue paper to absorb excess oil. 3. Sauté Vegetables • Heat a little oil in a pan. • Add onion cubes + capsicum cubes + tomato cubes. • Sauté on high flame for 2–3 minutes to retain crunch. 4. Sauce Preparation • Add extra ½ tsp ginger-garlic paste. • Add tomato ketchup + chilli sauce + soya sauce. • Mix well and adjust salt. 5. Tossing Brinjal • Add the fried brinjal slices into the sauce and toss well. • Add slit green chillies + garam masala. • Mix so that the brinjal is coated with the masala. 6.
