Perfect with naan, roti, or steamed rice. 🥘 Ingredients For Marination • 3 cups soya chunks (soaked in hot water for 10 minutes, then drained & rinsed) • ¾ cup thick curd (yogurt) • 2 tbsp ginger-garlic paste • ½ tsp turmeric powder • 1½ tsp Kashmiri red chili powder • ½ tsp salt • 1 tsp cumin powder • 1 tsp coriander powder • ½ tsp garam masala • 3 tbsp roasted gram flour (besan) • 1 tbsp kasuri methi (dried fenugreek leaves) • 1 tsp chaat masala • 1 tsp lemon juice • 3 tbsp mustard oil (heated until smoking, then cooled slightly) • 1 big onion (cubed) • 2 medium capsicum (cubed) • 1 medium tomato (cubed) For Masala (Gravy) • 2–3 tbsp oil • 1 tsp cumin seeds • 1 bay leaf • 2 big onions (finely chopped) • 1 tbsp ginger-garlic paste • 1 green chili (slit) • 3 medium tomatoes (pureed) • 1 tsp Kashmiri red chili powder • ½ tsp red chili powder • 1½ tsp salt (adjust to taste) • 1 tsp coriander powder • 1½ cups water • 1 tsp garam masala • 1 tsp kasuri methi • Fresh coriander leaves for garnish 📝 Step-by-Step Method Step 1: Prepare Soya • Soak 3 cups soya chunks in hot water for 10 minutes. • Drain, rinse, and squeeze out excess water. Step 2: Make Marinade • In a large bowl, whisk ¾ cup curd until creamy. • Add ginger-garlic paste, turmeric, Kashmiri chili powder, salt, cumin powder, coriander powder, garam masala, roasted besan, kasuri methi, chaat masala, lemon juice, and mustard oil. • Mix well into a smooth batter. Step 3: Marinate • Add soaked soya chunks, onion cubes, capsicum cubes, and tomato cubes. • Mix thoroughly so everything is coated. • Rest for 15–20 minutes. Step 4: Cook Tikka • Heat a kadhai (wok) on medium-high flame. • Add marinated soya, onion, capsicum, and tomato. • Sauté until golden and slightly charred. • Remove and keep aside. Step 5: Prepare Masala • Heat 2–3 tbsp oil in the same kadhai. • Add cumin seeds and bay leaf. • Once they splutter, add chopped onions. Fry until golden brown. • Add ginger-garlic paste and green chili. Cook for 2–3 minutes. • Add tomato puree.
