Join the wonderful Rachel Allen as she combines a heartwarming and delicious steak and Guinness pie with a very unusual ingredient - Oysters! If you want to recreate this recipe in your Thermomix, simply follow the steps below: INGREDIENTS 675 g stewing steak, cut in pieces (4 cm) 15 g olive oil 2 tsp fine sea salt 1 tsp ground black pepper 250 g onions, quartered 2 garlic cloves 15 g plain flour 1 beef stock cube (for 0.5 l) 250 g Guinness® 250 g button mushrooms, quartered 12 fresh oysters, shucked, oyster only 1 sheet puff pastry, ready-rolled, at room temperature 1 medium egg, beaten PREPARATION 1. Place a large bowl on mixing bowl lid and weigh in beef, olive oil, salt and pepper then remove from lid and mix with spatula to coat. Heat a large frying pan over medium heat and brown beef in batches. Transfer beef and pan juices to a bowl and set aside. 2. Place onions and garlic in mixing bowl then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula. 3. Add reserved browned beef with juices and flour then cook 5 min/90°C/reverse/speed spoon. 4. Add stock cube and Guinness® then cook 1 h 30 min/100°C/reverse/speed spoon. 5. Add mushrooms and cook 30 min/100°C/reverse/speed spoon. Meanwhile, preheat oven to 180°C. 6. Add oysters with any juices and stir with spatula to combine then cook 3 min/100°C/reverse/speed 1. Transfer to a large pie dish and cover with puff pastry. Trim pastry and press along edges of dish to seal. 7. Brush pastry with beaten egg and bake for 15-20 (180°C) minutes until golden. Serve with mashed potatoes and steamed broccoli, for example.
