Pizza Crust Recipe (white all-purpose flour) 2 3/4 cups warm water 1 ½ Tbsp active dry yeast(2pkgs) 1 Tbsp Sugar 1 ½ Tbsp salt 6 1/2 cups unbleached all-purpose flour ¼ cup extra virgin olive oil Stir together water, yeast, and sugar. Let sit for 3-5 minutes. Add in flour and salt, mix well. Start with 6 cups of flour and if it is too sticky and doesn’t come together, gradually add more flour until you get the desired consistency. Mix in olive oil and let rise for 2 hours. Once dough has risen you can now use it to make your pizza, or you can put it in the fridge to use in the next week. Einkorn Pizza Crust Recipe 2 ½ cups warm water 1 ½ Tbsp active dry yeast(2pkgs) 1 Tbsp Sugar 1 ½ Tbsp salt 6-7 cups einkorn all- purpose flour ¼ cup extra virgin olive oil Stir together water, yeast, and sugar. Let sit for 3-5 minutes. Add in flour and salt, mix well. Start with 6 cups of flour and if it is too sticky and doesn’t come together, gradually add more flour until you get the desired consistency. Mix in olive oil and let rise for 2 hours. Once dough has risen you can now use it to make your pizza or you can put it in the fridge to use in the next week. To make pizza- Heat the oven to 450 degrees and place a pizza stone in the oven as it’s preheating. On a piece of parchment paper slightly bigger than your stone, sprinkle a small amount of cornmeal. Take ¼ of your dough and press it out onto the parchment paper about the size of your pizza stone. Top pizza with sauce, cheese and desired toppings. Pull the hot pizza stone out of the oven and place pizza that is still on the parchment paper onto the stone. Put into the oven and bake until desired doneness. Usually takes 12 minutes or so if the stone is really hot. If you don’t have a pizza stone or you just want to make the whole process a little easier, feel free to press or roll your crust onto any size pizza pan, top with sauce cheese and desired topping and place in 450 degree oven for 15-20 minutes. Sourdough - Replace the active dry yeast with ¾-1 cup of sourdough starter that has been fed within the last day or 2. You might have to change up the flour ratios depending on the thickness of your starter. Start with a lower amount and add more as needed. The dough will need to rise on the counter for 8-12 hours(until doubled) before using or placeing in the fridge. Notes - If using dough from the fridge, it may need to cook longer since it’s cold or you may want to let it rise for 20-30 minutes after you have made the pizza. If the cold dough is resistant to rolling out into a pizza shape, let it sit for about 10-15 minutes to relax and then try reforming it into a pizza. Also the longer the dough sits in the fridge the more loose it becomes so you may need to flour it really well as you are forming it into a pizza.
