I've always been obsessed with all things lemon and this lemon tofu recipe is genuinely the best one I've had. I've tried many recipes where the sauce doesn't quite do it for me or the batter is overly complex so I've paired my favourite simple batter with a perfect sweet and tangy lemon sauce to create this Chinese-takeout inspired crispy lemon tofu 🍋 If you want to get someone to like tofu or are looking to try more tofu recipes yourself, I highly suggest giving it a try! (Serves 2 generously) Ingredients: 1/2 block of extra firm tofu Broccoli and rice or pairing of choice Green onion (for sauce and garnish) Batter Ingredients: 1/4 cup flour seasoned with salt & pepper (toss the tofu in this first before the wet batter) 3/4 cup of flour (for the wet batter) 1 tsp lemon & herb seasoning (optional), 1/2 tsp of salt, dash of pepper 1/2 tsp baking powder 1/2 can of sparkling water (neutral flavour or citrus flavour work great, regular cold water works too) Lemon Sauce Ingredients: Zest from 1 lemon (~ 1tbsp) Juice from 1 lemon (~1/4 cup) 2 tbsp soy sauce 3 tbsp sugar (brown or white) honey works too but does change the flavour and I would use less of it. If you prefer a sweeter sauce, use 4 tbsp. 1 tsp minced garlic 1/2 cup veggie broth or water 1 tbsp cornstarch 1/2 tsp minced ginger (optional) Chilli flakes (optional) Instructions: 1. Rip half a block of extra firm tofu into bite-sized pieces. Start cooking rice. Chop broccoli, green onion and/or other pairings. 2. In one bowl, add 1/4 cup of flour and season with some salt and pepper, then toss the tofu in the flour. 3. In another bowl, combine the rest of the batter ingredients starting with the flour, baking powder and seasonings and then add half a cold can of sparkling water and whisk together (regular cold water works too). 4. Individually add the pieces of tofu from the flour and place into the wet batter and stir gently until coated. 5. Heat a pan with a generous amount of oil until the whole bottom of the pan is coated (you can also use more oil and deep-fry, but I just use a regular pan and flip them once). Set to medium heat and cook the battered tofu a couple minutes per side until golden brown. Place in a bowl with a paper towel to absorb excess oil. 6. Make the sauce by combining the lemon juice, lemon zest, soy sauce, veggie broth, sugar and cornstarch. Whisk together. 7. Fry broccoli or other veggies in the pan until cooked and set aside. 8. On medium-low heat, add minced garlic, the chopped whites from a green onion, and optional ginger and chilli flakes to taste. Cook for about 1 minute before pouring in the sauce. Allow sauce to heat and thicken for a couple minutes, then turn off heat and add your tofu and veggies back in. 9. Serve on rice, garnish with green onions if you wish and enjoy!
