This "pizza/french fries" drill is standard for alpine skiers when they're learning to snowplow. But it's totally applicable for cross-country skiers, as well! The main difference between the two disciplines with regard to performing a snowplow, however, is that with xc skiing we need to apply way more pressure to our skis in order to get them to stop. So by learning to effortlessly move up and down on our skis while gliding downhill we'll be able to effectively do a basic snowplow. Learning to pressure up and down on our cross-country skis when traveling downhill isn't only useful for a snowplow, though. The up and down movement (weighting/unweighting our skis) will also enable us to perform other downhill techniques such as a hockey stop, stem/wedge Christie turn, parallel turn, and Telemark turn. Ultimately, being able to pressure down on our skis (by getting our body weight down), and then releasing that pressure (by returning to a mostly upright position) is a critical skill that we all need to be able to perform in order to safely navigate variable terrain.
