Spinach is an excellent source of vitamin K, vitamin A (in the form of carotenoids), manganese, folate, magnesium, iron, copper, vitamin B2, vitamin B6, vitamin E, calcium, potassium, and vitamin C. It is a very good source of dietary fiber, phosphorus, vitamin B1, zinc, protein, and choline. Heat the pan and add little oil then add Palak (spinach), cook the (Palak) spinach and green chili and keep aside to cool. After it get cool grind in the mixer and make palak (spinach) as a paste. Then put the chopped onion, garlic and ginger in the mixer to make as a paste. Finally grind the tomato as a paste and keep aside. Add oil in the pan let the oil get heated up and add Cinnamon, Cardamom and cloves then cumin seeed, Onion and ginger garlic paste. Fry the mixture till the raw smell goes of onion, Ginger garlic paste. As soon as the mixture turn to light brown colour add the tomato paste. Cook the tomato paste till the raw smell goes. In the meantime deep fry the potato cubes in oil. If you don’t want deep fry you fry the potato with little oil. In the mixture on the other pan add Coriander powder, Garam masala powder, Turmeric powder and fry little till the raw smell goes and add salt to taste. Now we going to add the palak paste and add water as per the consistency required don’t let the mixture boil after adding the palak. Add the fried potatoes in the mixture and within a minute switch off the flame.
