Comfort in a bowl. This is the way I like it simple, cozy, and full of flavor. Feel free to adjust the seasonings to make it your own. 🌶️🫑🍲 Ingredients • 4 boneless chicken thighs • Adobo seasoning (to season chicken) • 1 red bell pepper, diced (green or any color works) • 1 large onion, diced • 3 garlic cloves, minced • Salt & pepper, to taste • 1 (15 oz) can crushed tomatoes • 1 can black beans, rinsed • 1 can kidney beans, rinsed • 1½ tsp chili seasoning • ½ tsp cumin • ½ tsp coriander • ½ tsp garlic powder • ½ tsp onion powder • ½ tsp oregano • Olive oil • ¼ can water (use the tomato can) Instructions 1. Season chicken thighs with adobo. 2. Heat olive oil in a pot over medium heat. Sauté chicken until both sides have some color. Remove and set aside. 3. In the same pot, add onion, bell pepper, and garlic. Sauté until soft and fragrant. 4. Add crushed tomatoes and ¼ can of water. 5. Stir in black beans and kidney beans. 6. Return chicken to the pot. Bring to a boil, then lower to a simmer. 7. Simmer about 1 hour, until the chicken is tender. 8. Remove chicken, shred it, and return it to the pot. 9. Stir and simmer a few more minutes—your chili is ready. Serve with Shredded cheddar cheese, sour cream, or any toppings you love. 🌶️ Like it spicy? Add hot peppers or extra spice to taste.
