Heat a drizzle of olive oil in a pot over medium heat. 2. Sauté the onion until soft and translucent, about 4–5 minutes. 3. Add the garlic and cook for about 30 seconds, until fragrant. 4. Stir in the rinsed rice and lightly toast it with the onion and garlic for 1–2 minutes. 5. Pour in all the chicken broth, add fresh thyme, salt, and pepper. 6. Bring to a boil, then cover and reduce heat to a gentle simmer. 7. Cook until the rice is tender but still slightly al dente, letting most of the liquid absorb while leaving a little in the pot for creaminess. 8. Turn off the heat and stir in the grated Grana Padano until melted and creamy. 9. Finish by stirring in the juice of ½ lemon. Taste and adjust seasoning as needed. Bright, creamy, and comforting—simple food made special. ✨Oven-Baked Breaded Chicken Thighs✨ Ingredients • 6–8 boneless, skinless chicken thighs • ¾ cup Italian-style breadcrumbs • ¼ cup grated Parmesan cheese • 1 teaspoon garlic powder • 1 teaspoon onion powder • 1 teaspoon dried Italian seasoning • Salt and black pepper, to taste • Adobo seasoning, to taste (use lightly) • Olive oil, as needed (for dipping and drizzling) ⸻ Instructions 1. Preheat oven to 425 degree Line a baking sheet with parchment paper or lightly grease a baking dish. 2. Prepare the breadcrumb mixture: In a shallow bowl, combine breadcrumbs, Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper. 3. Oil dip method: Pour olive oil into a shallow pan or bowl. Dip each chicken thigh into the oil, coating lightly on all sides. 4. Season with adobo: Sprinkle adobo seasoning lightly over the chicken, top and bottom. 5. Bread the chicken: Press the seasoned, oiled chicken into the breadcrumb mixture, coating well on all sides. 6. Bake: Arrange chicken in a single layer on the baking sheet making sure not to crowd the pan. Drizzle lightly with olive oil. Bake uncovered for 40-45minutes, flipping halfway through, until golden and cooked through (165°F internal temperature).
