This recipe uses wholesome ingredients like coconut milk, cinnamon, nutmeg, and cornmeal. This recipe gives a breakfast that’s perfect for busy mornings, meal prep, or healthy eating goals. INGREDIENTS ✔ ½ cup fine cornmeal (stone ground preferred) ✔ 2 cups water ✔ 1/2 cup coconut milk or unsweetened almond or oat milk and condensed milk ✔ ½ tsp salt ✔ ½ tsp cinnamon (anti inflammatory spice) ✔ ½ tsp nutmeg ✔ 1/2 tsp vanilla extract ✔ 1–2 tbsp honey or pure maple syrup (natural sweetener) optional INSTRUCTIONS: Bring water + cinnamon sticks and bay leaves to a boil in a pot. Slowly whisk in cornmeal in water to avoid lumps and pour slowly to hot water in the pot. Reduce heat and cook 15-30 min until slightly thickened and it is well cooked. Add coconut or almond milk, cinnamon, ½ tsp salt, nutmeg & vanilla. Sweeten with honey or brown sugar (optional) Serve hot with toppings like fresh fruit, chia seeds, or nuts!
