The ideal texture for a restaurant-style Veg Kolhapuri is a harmonious contrast between a thick, smooth, and silken gravy and chunky, crisp-tender vegetables. 00:00-Introduction 00:32-Ingredients 01:48-Steaming veggies 02:30-Masala 04:31-Sauteing paneer and veggies 05:61-Veg kolhapuri 08:49-Serving #VegKolhapuri #VegetableKolhapuri #KolhapuriBhaji #KolhapuriMasala #MixVegCurry #SpicyCurry #MaharashtrianCuisine #KolhapuriFood #RestaurantStyleVegKolhapuri #HotelStyleCurry #HomemadeMasala #FreshlyGroundSpices #IndianGravyRecipe #SabziRecipe #mixvegrecipeinhindi Ingredients: • Cauliflower florets • Carrot batons • Chopped French beans • 1/4 cup shredded dry Coconut • 1 tsp Poppy seeds • 1/2 tsp white Sesame seeds • 1 tbsp Coriander seeds • 1 tsp Cumin seeds • 2~3 dry Red chilies • 1 Star anise • 4~5 black Peppercorns • 2~3 Cloves • 1 black Cardamom • 2 green Cardamom • 1 Cinnamon stick • Water as needed • 2 tbsp Oil • 100 gm Paneer • 1 tbsp Oil • 1 tsp finely chopped Garlic • 1~2 dry Red chili • 2 medium size finely chopped Onions • 2 Tomatoes’ puree • 1 tsp Red chili powder • 1 tsp Garam masala • Salt to taste • A little Water • Frozen peas • Kasuri methi • 1 tsp Ghee Method: • Heat up water in a pan and when the water begins to boil place a strainer on it. • Add cauliflower, carrot and French beans and cover it with a lid. • Steam the veggies on medium heat for about 10-15 minutes. • Heat up a pan on medium heat and add dry coconut, poppy seeds, white sesame seeds, coriander seeds, cumin seeds, dry red chilies, black peppercorns, cloves, black and green cardamom and cinnamon stick. • Dry roast the whole everything well together until coconut gets nice brown color. • Turn the gas off and let the mixture cool down. • Transfer the mixture into a blender jar and blend it into as fine powder as possible. • Add water and blend it well into as fine paste as possible. Masala or vatan is ready. • Heat up oil on high heat in a pan and add paneer. • Fry paneer on high heat just for about a minute or two until it gets nice golden color and add steamed veggies. • Toss them together and take the veggies and paneer out into a dish. • In the same pan add more oil and add garlic and dry red chili. • Fry it a little until garlic gets light golden color and add onion. • Fry well until onion gets nice golden color and add tomato puree, red chili powder and garam masala. • Mix well and fry it well together for about 4-5 minutes. • Add the blended masala and mix well. • Add salt and water and mix well. • Simmer the gravy for about 5 minutes and add the veggies and paneer, frozen peas, kasuri methi and ghee. • Mix everything well together and simmer the bhaji for just about 5 minutes. Veg kolhapuri is ready.
