Tom Lewis is chef/owner at Monachyle Mhor Hotel, Balquhidder. He took the business over from his parents in the mid 90’s and elevated the hotel to one of Scotland’s top destinations for food, design and service. Monachyle Mhor is one of just a handful of agritourism hotel businesses in Scotland. Tom is passionate about seasonal, local, wild and foraged foods and this is evident in his business innovation. The hotel is still a working family farm with sheep, cattle and outdoor pigs for the restaurant. Living in rural Perthshire there is an abundance of red and roe deer which are all processed on site in the game larder and butchery. Over the last 20 years Tom has developed the business and the Mhor brand to include the Mhor Bread bakery in Callander and Mhor 84 Motel on the A84 in Balquhidder.
