Classic French Quiche is normally cooked with bits of bacon in it, but there are alternatives you can use to make a really tasty halal version of a classic quiche. Not only that, but you get free Jammy Dodgers when you make a quiche... Ingredients 350 ml (10 fl oz) single (pouring) cream 250 g (8 oz) shortcrust pastry 150 g (5 oz) grated cheese 150 g (5 oz) halal salami or similar 1 onion, finely chopped 3 eggs 1 tbsp oil Mustard Instructions Preheat the oven to 210ºC. Line a 20cm (8″) flan dish with the pastry and blind-bake the pastry for 10 minutes. Remove from the oven, spread the base with mustard, prick with a fork and bake for a further 5 minutes. Cook the onions in the oil on a low heat for about 15 minutes. Beat together the eggs and cream. Season with salt and pepper. Sprinkle half the cheese on the pastry base. Add the onions, the meat and the remaining cheese. Pour in the cream/egg mixture. Bake at 180°C for about 35 minutes. Leave to cool completely before serving. Titli's Tips Other possibilities for quiche include: Use smoked salmon instead of meat and add some chopped cucumber or dill. Substitute the meat with Stilton, Gorgonzola or any other strong-flavoured cheese. Use sausages instead of meat, but cook them first and slice them. Use mixed wild mushrooms with a touch of garlic. Sweetcorn with chicken or tuna. For a veggie quiche use diced peppers and onions. Use chicken tikka for the meat for a Desi quiche! Use your imagination, and happy experimenting!
