Sour Cream Cake This is my mother-in-law’s recipe, and a favorite of my husband and my kids. This is a perfect light and cinnamon coffee cake. I still make this recipe in her XL loaf pan. Ingredients: 1 lb salted butter (4 sticks) 2 sticks for cake 1/2 stick to grease the pan. 1 1/2 sticks for the cinnamon filling 2 cups granulated sugar 4 cups flour (sifted) 2 tsp baking soda 2 tsp baking powder 4 large eggs 2 cups sour cream 2 tsp vanilla extract Filling: Butter + 4 tsp cinnamon + 2 TBLS sugar Preheat oven to 350. Generously grease XL loaf pan with butter. Combine flour, soda, & powder in a bowl and set aside. Cream 2 sticks of butter and sugar together. Add eggs one at a time. Add sour cream & vanilla extract. Gradually add dry ingredients. Bake in XL loaf pan at 350 for 50 minutes. Melt 1.5 sticks of butter in a Pyrex cup, stir in cinnamon, & mix well. Split top of cake and slowly pour or spoon the butter/cinnamon mixture into the cake. Use a teaspoon to swirl it around inside the cake. Bake for another 30 minutes or until a toothpick comes out clean. Let cool in pan.
