Megan Lavin warns the food allergy and celiac communities and potentially troubling ingredient: wheat starch. It's one popping up in an increasing number of gluten-free products. So what is this form of wheat starch? It's one processed to "wash out" the gluten proteins, so only a trace level of gluten is left. As Megan explains, it's called "gluten-free" and may be safe for many with celiac disease. But it is a big concern for those with a severe wheat allergy, such as her son. While wheat must be labeled as an allergen by law, many brands use gluten-free claims on the front of packages. Megan is worried about the resulting confusion between "gluten-free" and "wheat-free". She says: "I feel an urgency to get the word out. I worry some people may blindly trust brands they know and grab it off the shelf." Even with celiac disease, one expert warns to be sure a gluten-free flour blend or baked product with wheat starch carries the "certified gluten-free logo." Otherwise, gluten can be present.
