At lunchtime, SOBATORI serves handcrafted juwari soba—made entirely from 100% buckwheat flour, using high-quality "Kitawase" buckwheat sourced from Hokkaido. The soba is milled, kneaded, and boiled fresh every day, with careful attention paid to the "three fresh steps" that define authentic soba: freshly ground, freshly made, and freshly cooked.
