Ingredients For the Filling: Paneer: 200g (crumbled or finely grated) Onion: 1 medium (finely chopped) Green Chillies: 2-3 (finely chopped) Fresh Coriander: A handful (finely chopped) Butter: 1 tbsp (for that "market-style" juiciness) Seasoning: Black pepper powder, Salt, and Red chilli flakes (to taste) For the Dough: All-Purpose Flour (Maida) and whole wheat flour: 1 cup whole wheat flour and 1/2 cup maida Water: As needed for a firm dough Salt: A pinch INSTRUCTIONS 1. Prepare the Dough Mix the flour and salt with water to knead a smooth, firm dough. Cover it with a damp cloth and let it rest for at least 20 minutes. 2. Make the Paneer Stuffing In a large mixing bowl, add the crumbled paneer. Add the chopped onions, green chillies, and coriander. Season with salt, black pepper, and chilli flakes. Finally, add a dollop of butter—this is the secret to keeping the paneer moist inside. Mix everything thoroughly. 3. Shape the Momos Take a small ball of dough and roll it out into a thin, translucent circle (the edges should be thinner than the center). Place a spoonful of the paneer mixture in the middle. Pleat the edges and seal the momo in your preferred shape. 4. Steam to Perfection Grease a steamer tray with a little oil. Arrange the momos, leaving space between them. Steam over boiling water for 10–12 minutes until the outer skin looks glossy and non-sticky. 5.
