I love my pork and I love my pork marinated. This super simple recipe will allow you full pork flavour with a delicious blend of complimentary ingredients to give the pork that WOW factor. What you’ll need ¼ cup soy sauce ¼ cup olive oil 1 tablespoon finely grated fresh ginger 3 tablespoons brown sugar 1 spring onion, finely chopped ½ tsp freshly ground pepper 4 bone-in pork chops (8 ounces each; 3/4 inch thick) Garnish: 1 spring onion, thinly sliced What to do Whisk together soy sauce, olive oil, the ginger, sugar, chopped spring onion, and 1/2 teaspoon pepper. If you’re a ginger lover feel free to increase the ginger to 3 tablespoons – but no more than that! Place the pork chops in a zip lock bag and pour marinade over pork chops. Marinate for 45 minutes, flipping chops halfway through. Add a tablespoon of olive oil to a large skillet over medium-high heat. Remove pork chops from marinade, and sear for 3 1/2 to 4 minutes. Reduce heat to medium. Flip chops, and cover with the marinade. Put a lid on the pan and bake in an oven preheated to 180 C for 20 minutes. When cooked, allow the chops to rest for 5 minutes while you reduce the marinade and pork juices on high heat. Spoon sauce over chops. Serve with mashed potato and garnish with thinly sliced spring onion.
