An easy and tasty South Indian Sambar recipe, made with toor dal and fresh vegetables. A perfect homemade sambar with rich flavour, balanced spices and the right consistency. This sambar is ideal as sambar for idli, dosa, vada and also delicious as sambar for rice. This quantity serves 8–10 people, making it perfect for family meals. Here you will find an easy step-by-step sambar recipe with perfect taste and thickness. This homemade toor dal sambar will help you make tasty sambar for Idli, Dosa, Vada and Rice. 👨🍳🍲Method Step 1 – Let’s Cook the Toor Dal first Ingredients 1️⃣ Toor Dal (washed) – 1 cup / 200 g 2️⃣ Tomato – 5, chopped 3️⃣ Onion – 2, chopped 4️⃣ Green Chilli – 2 slit lengthwise 5️⃣ Turmeric Powder – ¼ tsp 6️⃣ Salt – 1 tsp 7️⃣ Water – 3 cups ➤ Pressure cook the dal for 1 whistle on high flame Step 2 – Preparing the Flavorful Masala Ingredients 1️⃣ Oil – 2 tbsp 2️⃣ Mustard Seeds – 1 tsp 3️⃣ Fenugreek Seeds (Methi) – ¼ tsp 4️⃣ Garlic Cloves (crushed) – 6 5️⃣ Kashmiri Red Chilli Powder – 1 tsp 6️⃣ Red Chilli Powder – ½ tsp 7️⃣ Turmeric Powder – ¼ tsp 8️⃣ Coriander Powder – 2 tsp 9️⃣ Sambar Powder – 4 tsp ➤ Add a little water while frying the masalas to avoid burning the spices ➤ Salt - 1 tsp (as per taste) Step 3 – Mix Dal, Masala & Vegetables Together Transfer the fried masala and all the vegetables mentioned below into the cooked toor dal. If you don’t have some of these vegetables, you can simply use whatever vegetables are available at home (can add potato, brinjal etc). Adding drumstick gives a special authentic flavour, and lady’s finger (bhindi) helps in giving a nice thickness to the gravy. Ingredients 1️⃣ Pumpkin – 250 g 2️⃣ Yam (Suran) – 250 g 3️⃣ Carrot – 2 (chopped) 4️⃣ Beans – 10 (cut into long pieces) 5️⃣ Drumstick – 1 stick (cut into long pieces) 6️⃣ Lady’s Finger (Bhindi) – 6 (cut into long pieces) 7️⃣ Tamarind Pulp – Small lemon-sized ball (soak in ½ cup water, strain, and use the pulp) 8️⃣ Hot Water – 2 cups or can add more water as needed for desired consistency ➤ Pressure cook for 1 whistle on high flame Step 4 – Tempering (Tadka) Ingredients 1️⃣ Oil – 2 tsp 2️⃣ Mustard Seeds – 1 tsp 3️⃣ Dry Red Chilli – 2 4️⃣ Curry Leaves – 2 sprigs Please Note ➤ I have not added extra asafoetida (hing) as it is already present in the sambar powder ➤ Check salt and adjust to taste. ➤ You can increase or reduce red chilli powder based on how spicy you like it. ➤ Water can be increased or decreased depending on the required thickness. ➤ Use only hot water while adjusting consistency A simple and tasty homemade South Indian Sambar recipe with lots of vegetables is ready.
