All Cinnamon bread we have seen takes 18 hours to prepare and does not get a good rise. Even store bought raisin bread is a small loaf. What many people may not know, is that Cinnamon, Ginger and Garlic have an anti-microbe that interferes and disturbs yeast fermentation, which means very little rise when proofed. This is our way to get the cinnamon flavour into our bread with the added deliciousness of raisins and cranberries. What you need 3 Cups Bread Flour 1 Teaspoon Salt 2 Teaspoon Quick Rise Instant Yeast 2 Tablespoon Dark Brown Sugar 1 Tablespoon Cinnamon 1-1/2 Cups Warm Water 1 Cup Raisins 1 Cup Dried Cranberries 1 Tablespoon 12 Grain Seed Mix What you need to do Add Quick Rise Instant Yeast to warm water and mix throughly. Once mixed add 1 tablespoon of Brown Sugar, mix until well blended. Set a side until ready to use. In a large bowl, add your Bread Flour, Salt, Raisins and Cranberries. With your hands or a wooden spoon, make sure the dried fruits are not clumped together, and fully covered with flour. Add the yeast mixture to the flour mixture and mix well. Keep mixing until all flour has been incorporated and a smooth dough is formed. Shape into a ball in the bowl. Cover with plastic food wrap and a bowl cover or towel. Place bowl in your oven with the light on for 3 hours. The light will add heat to the oven and help the proofing process. Remove dough from oven, place dough on a floured surface. Fold into it self a few times. Work dough to a rectangle shape. Add the remaining Brown Sugar to the surface of the dough.. Creating a barrier between dough and the Cinnamon. Next sprinkle about 1 tablespoon of Cinnamon over the Brown Sugar. Fold left side of dough to the centre, fold the right to the centre, closing in the brown sugar and cinnamon in the middle. Roll the dough starting from the top and place in your greased or cover parchment paper lined loaf pan. Cover with plastic wrap and bowl cover, put back in oven for 1 hour. after 1 hour has passed remove pan from oven, should have risen quite a bit more. Preheat oven to 450F. Bake at 450F for 15 minutes, then at 375F for 25 minutes. When done, remove from loaf pan and cool for 10 - 15 minutes before cutting. Enjoy!! Bom Appetite!!!
