Serves 4 – Veg Side Ingredients 4 Red or White Chicory 1 Veg Stock Cube Olive Oil Honey Equipment 1 Large Pan Measuring Jug Whisk Chopping Board and Knife Chop ends off endive, making sure to cut very little so the endives keep their shape. Then cut in half long ways. Pour boiling water over stock cube (3/4 jug) and whisk. Olive oil in pan and let heat up – on high heat. Place the endive flat side down in pan and let sizzle. After a couple of minutes there should be a lovely aroma coming from them and lift one with a spoon to make sure they have started to brown and crisp. Flip the endive onto their backs and repeat (add oil if you need). Flip back to their flats and now its time for the honey. Pour over a generous squeeze of honey on top of the endive. Let it caramalise for moments making sure to not let the honey burn and get bitter. Then pour over the stock, go up to half way up to the endive. Let bubble away on a high heat (medium to high heat if you have gas stove). Leave to bubble for 10 minutes (if it reduces too far add a little more stock). With a small knife piece, the core of the endives to check that the knife slides in and out, we want them nice and softened so they cut and eat easily. Serve two halves to a person! Enjoy :)
