I missed you! ✨ I just got back from an incredible vacation, and let's be real—the post-travel depression is REAL. 😭✈️ To ease myself back into "normal life" (and delay the Monday dread), I decided to cook up a spicy Korean-inspired feast to cheer myself up! 🌶️ Tonight I made a homemade Tteokbokki (Korean Spicy Rice Cakes) – Chewy, spicy, and soooo comforting 🍢🔥 and Beef Udon Stir-Fry – Extra spicy, extra garlicky, extra delicious 🍜🧄 Also,I can’t eat this much heat without a chaser 🍺❄️I’m still dreaming of beach vibes, but at least my taste buds are happy! 😂 👜 At the night time, I prepped my new Teddy Blake work bag (the leather is so luxurious) for tomorrow. Trying to adult… one step at a time 🌶️ Spicy Beef Udon Noodles Recipe 🍜 Ingredients For Beef: 200g beef tenderloin, 2 tbsp soy sauce, 1 tbsp dark soy sauce, 2 tbsp cooking wine, 2 tbsp cornstarch, black pepper For Noodles: 1 pack udon, 1/2 onion (sliced), 3 garlic cloves (chopped), 1/2 curry block, 1 tbsp chili powder, 50ml coconut milk (or regular milk) Toppings: Shredded cheese, chili powder 👩🍳 Instructions 1️⃣ Marinate the Beef Cut beef into cubes. Mix with 2 tbsp soy sauce + 1 tbsp dark soy sauce + 2 tbsp cooking wine + 2 tbsp cornstarch + black pepper. Marinate for 10 mins. 2️⃣ Prep Chop garlic, slice onion. Boil udon for 2 mins, rinse in cold water (for chewy texture!). 3️⃣ Curry Udon Sauté onion until soft. Add 1/2 curry block + splash of water, melt into thick sauce. Toss in udon + 1 tbsp chili powder + 50ml coconut milk. Stir to coat evenly. Set aside. 4️⃣ Cook Beef Stir-fry garlic in hot oil. Add marinated beef + 1 tbsp sugar + black pepper. Sear until caramelized. 5️⃣ Assemble Top curry udon with beef. Sprinkle cheese & chili powder. Mix while hot—melty cheese is a must! 🧀🔥 🔥 Spicy Korean Tteokbokki (Stir-Fried Rice Cakes) Recipe 🍢 Ingredients 200g Korean rice cakes (tteok) Fish cake Cabbage (thinly sliced) Onion (thinly sliced) 2 tbsp Korean tteokbokki sauce (or gochujang) 1 tbsp chili powder (adjust to taste) 1 tbsp soy sauce 1 tbsp sugar 1 cup water 👩🍳 Step-by-Step Instructions 1️⃣ Prep the Rice Cakes Boil rice cakes for 2-3 minutes until soft. Drain and rinse in ice water (keeps them chewy!). 2️⃣ Sauté Veggies In a pan, stir-fry cabbage and onion until soft (~3 mins). 3️⃣ Make the Sauce Add tteokbokki sauce, chili powder, soy sauce, sugar, and water. Stir and let it simmer until slightly thickened. 4️⃣ Combine Everything Add rice cakes and fish cake.
