Happy cooking! 💌 Business Email: [email protected] ✍Subscribe to my Substack: https://bit.ly/3Gu5UHA 📚My Cookbook https://www.amazon.de/-/en/Mina-Rome/... → order it anywhere there’s books, online or in bookstores _____________________________________________________________ intro 0:00 ⭐INGREDIENTS & NOTES⭐ #1 Wasabi Avo “Sando” 0:26 for the wasabi cream cheese: 150g plain vegan cream cheese (5.3oz) 1-2 tsp wasabi (start with 1, then see if u want more) 1-2 tsp rice or white wine vinegar salt, pepper to taste also 4 slices bread 100g pre-fried tofu (3.5oz) lil bit of veg oil for panfrying the tofu 1 avocado, cut into slices 1 small handful crispy seaweed snacks OR 1 sheet nori cut into slices roasted sesame seeds optional: cucumber slices → yields 2 sandwiches #2 Instant Tofu “Chicken” Noodles 2:11 for the tofu “chicken”: 400g firm plain tofu (14oz) 1 ½ tbsp cornstarch 1-2 tbsp soy sauce 1 ½ tbsp veg oil also 1 packet instant noodles of choice enough hot water to cover/boil the noodles 1-2 handfuls baby spinach a few tbsp vegan kimchi roasted sesame seeds spring onion, chopped → serves 1 (leaves some tofu to be used in other recipes! store in the fridge sealed for up to 3-4 days) #3 “Chicken” Marinara Subs 3:45 1 baguette ~ 2 tbsp olive oil for brushing the bread 1 cup favorite marinara sauce (250ml), plus optionally more for serving a few handfuls of vegan pizza cheese (one that melts?!) tofu “chicken” from recipe #2 sesame seeds baby spinach fresh basil optional: chili mayo → serves 2 #4 Crispy “Tuna” Rice Bites 5:04 for the chickpea “tuna”: 1 can chickpeas (400g = 14oz) 1 ½ tbsp vegan mayo 1 tbsp soy sauce 2 tbsp oat milk (or soy) 2 tsp gochujang (or to taste) 1 tbsp white wine vinegar (or rice vinegar) 1 tbsp nutritional yeast 1 sheet nori, ripped to bits 1 spring onion, roughly chopped salt to adjust flavour also 2-3 servings cooked cold sticky rice* 1-2 tbsp veg oil for the pan steamed broccoli on the side extra soy sauce spring onion sesame seeds *sushi rice or porridge rice works great here *you can also, using your hands, tightly press the cooked rice into bites and then fry them in the oil until lightly golden from both sides! → serves 2 #5 Breakfast Burritos 7:00 1 small red onion 1 tbsp vegetable oil for the pan 1-2 tsp vegan butter (optional) 1 medium yellow potato ⅓ tsp vegetable broth powder enough water to barely cover the potatoes (if it evaporates before the potatoes are cooked through, add another splash or so) 1 can black beans (400g = 14oz) 1 tbsp sriracha, or more to taste 1 tbsp nutritional yeast 1 splash soy sauce 1 tsp agave syrup 1 tbsp white wine vinegar 2-3 tbsp frozen or fresh chopped parsley salt to taste 2-3 medium sized tortillas 1 tomato sliced sesame seeds baby spinach vegan cheese a little additional sriracha → yields 2-3 wraps #6 One Pot Lentil Stew 8:47 1-2 tbsp olive oil 1-2 spring onions (reserve some of the green stuff for serving) 3 cloves peeled garlic, whole 2 medium yellow potatoes, peeled 3 small carrots 1 smaller sweet potato, peeled (or another yellow one) 135g (4.8oz) dry green lentils* (check the package, they should cook within 20-30 min) 400g (14oz) pre-made marinara sauce 500ml (2 cups) water, more if needed 1 tbsp miso paste ½ tsp vegetable broth powder 1 tbsp nutritional yeast 1-2 tbsp white wine vinegar 1 tsp agave or sugar salt, pepper to taste 2-3 handfuls baby spinach serve with baguette, rice or on its own! → serves 3-4 *wash the dry lentils in a fine sifter before adding to the pot MUSIC: intro by dominic fike: https://open.spotify.com/track/44KWbT...
