Learning Healthy Cooking for Allergies
Dr. Marissa Love, an allergist at The University of Kansas Health System, noticed that many food allergy patients, particularly in low-income communities, struggled to find and afford safe, nutritious food. In response, she collaborated with Professor Debra Sullivan to create a culinary medicine class. This course educates future healthcare workers on the challenges of food accessibility, affordability, and healthy cooking to better serve their future patients. Dr. Love hopes to expand this into a community-wide culinary medicine center.
