INGREDIENTS Brownies 1 cup granulated sugar 1/2 cup all-purpose flour 1/3 cup unsweetened cocoa powder 1/4 teaspoon salt 1/2 teaspoon baking powder 2 large eggs 1/2 cup vegetable or canola oil 1/2 teaspoon vanilla extract 1/2 cup semisweet chocolate chips 1/4 cup chopped pecans 1/4 cup caramel bits Topping 6 ounces semisweet or dark chocolate chopped 1 1/2 tablespoons vegetable shortening 1/2 cup semisweet chocolate chips 1/2 cup white chocolate chips 1/2 cup chocolate covered caramels I used Rolos, chopped 3/4 cup pecans roughly chopped 1/3 cup salted caramel sauce INSTRUCTIONS Grease an 8×8 inch baking pan or line with aluminum foil and spray foil as well. Preheat oven to 350 degrees F. In a large bowl, whisk together the sugar, flour, cocoa powder, salt and baking powder. Add the eggs, oil, and vanilla and stir until well incorporated. Fold in chocolate chips, pecans, and caramel bits. Pour the batter into the prepared pan and put into oven. Bake for 35-40 minutes or until the brownies are set. Let cool completely. Next, place chopped chocolate and shortening into a heatproof bowl. Heat in 30 second intervals in the microwave until completely melted – stir frequently. Pour melted chocolate over the brownies in an even layer. Sprinkle chocolate chips, chopped chocolate covered caramels, and chopped pecans over the chocolate. Drizzle with the caramel sauce and let brownies sit for 30 minutes or until chocolate is set before cutting into squares.
