THREE MEAT PULAO PLATTER Ingredients Mutton chops boiled 500 gm Marinate with Yogurt ½ cup Cream ¼ cup Ginger garlic 2 tbsp Green chili pastes 1 tsp Black pepper 1 tsp Salt 1 tsp Soy sauce 1 tbsp Ground cumin 1 tsp Ground coriander 1 tsp Chili powder 1 tsp Chili flakes ½ tsp Clarified butter to sauté the cooked chops METHOD FOR CHOPS Boil chops marinate with all the given ingredients, fry in ghee till done Ingredients for kebabs Mince 300 gm Ginger garlic paste 1 tbsp Onion boiled and ground 1 Fried onion 3 tbsp Green chili finely chopped 3 Roasted gram flour 2 tbsp Seekh kabab masala 2 tbsp Papaya ground ½ tsp Cream 1 tbsp Clarified butter 1 tbsp Green cardamom powder ½ tsp Salt ½ tsp Black pepper ½ tsp Coriander leaves 2 tbsp Mint leaves 10 METHOD FOR KABABS Chopperise mince with all the given ingredients, make into crocket shape and shallow fry. Ingredients for Pulao Chicken 8 karahi pieces ½ kg Rice soaked ½ kg Ingredients for Pulao Masala Whole coriander seeds 1 tbsp Black cumin seeds 1 tsp Fennel seeds 1 tsp Whole black pepper 1 tsp Cloves ½ tsp Green cardamom ½ tsp Black cardamom 2 Dried lemon half Nutmeg ½ tsp Dried red chilies 4 Mace ½ tsp METHOD FOR PULAO MASALA Grind all into fine powder. TO MAKE PULAO Clarified butter ½ cup Mixed whole spices 1 tbsp Ginger garlic 2 tbsp Star anis 1 Sliced tomatoes 2 Chopped green chilies 4 Yogurt 1 cup Salt 2 tsp Chicken powder 1 tsp Saffron essence ¼ tsp Water to make stock Fried onion to add before simmer Nutmeg and mace powder To Assemble Boiled eggs 2 Fried potatoes 8 Fried green chilies 6 METHOD Heat ghee in a pan, add whole spices, chicken, fry till golden, add in all the ingredients, add rice, cook till water dries, cover and simmer on low flame for 20 mins.
