Almond cheese cracker Ingredients Almond Flour: 100gms Baking powder: ½ tsp Xanthan gum: 1tsp Grated Mozzarella cheese: 50gms Salt: a pinch Olive oil: 2 tbsp Cold water: 3 to 4 tbsp Method Step 1: Put all dry ingredients 100 gms Almond flour, ½ tsp baking powder, a pinch of salt and 1 tsp xanthan gum in a mixing bowl and mix well. Knead along with 2 tbsp olive oil and 3 tbsp cold water. Step 2: Make a ball of the dough. Add 50 gms of grated mozzarella cheese all over and inside the ball. Cover and keep aside for 15 mins. Step 3: Grease parchment paper with olive oil and place it in a baking tray. Pre heat the oven at 170ᴼ Celsius. Step 4: After 15 mins. divide the dough ball in two parts. Take 2 pieces of parchment paper. Place the portion of dough on one paper cover it with another piece of parchment paper and roll out a slightly thick roti. Cut it as per desired shapes like square, triangle, round etc. Alternatively you may use tortilla press to get even thickness and cut as per desired shapes. Step 5: Place the crackers carefully in the baking tray. Prick the crackers with the help of a fork and brush olive oil on them. Bake at 170ᴼ Celsius for approximately 15 to 20 mins. When the crackers change colour, turn them over and bake further for 5 to 10 mins. Store the crackers in air-tight containers once they cool down. Enjoy them with any dip or plain to beat small hunger pangs.
