Simple Sindhi Style Pyaz Bhindi Aloo Sabzi This is a very simple and authentic Sindhi-style sabzi where onion is the main base and bhindi and potatoes add great flavor and texture. Even though the recipe uses very basic ingredients and a simple method, the taste turns out incredibly delicious. It goes perfectly with soft fulkas or Sindhi rice, making it a comforting everyday meal. Ingredients • 1 onion (finely chopped) • 2 potatoes (cut into small cubes) • 250 g bhindi / okra (slit into halves) • 1 tomato (chopped) • 1 green chilli (chopped) • Salt to taste • ½ tsp turmeric powder • 1 tsp red chilli powder • 1 tsp coriander powder • Oil for cooking Method 1. Finely chop the onion. Cut the potatoes into small cubes. Slit the bhindi into two halves. Chop the tomato and green chilli. 2. Heat oil in a kadhai. Add the bhindi and fry it nicely until slightly crisp. This helps prevent the bhindi from becoming sticky. Remove it from the kadhai and keep aside. 3. In the same oil, add the green chilli. Then add the chopped onion, potatoes, and tomato. 4. Add salt, turmeric powder, red chilli powder, and coriander powder. Mix everything well. 5. Now add the fried bhindi back into the kadhai and mix nicely. 6. Cover and cook on medium heat. After some time open the lid, mix the sabzi, and cover again to continue cooking. Repeat this until the potatoes are cooked well. 7. Once the onion changes colour and the potatoes are soft, the sabzi is ready.
