Tastes from Home: My attempts to re-create my mom's recipes. I admit my mom isn't a Michelin star chef (sorry, Mom), but her protein waffles put Waffle House to shame. Can I re-create her recipe when I'm craving comfort food? Mom's recipe (mostly) verbatim: Ingredients: 3 eggs 1/2 cup Greek Yogurt 1/8 cup oil (canola or olive or whatever oil you like) 1/2 cup dry oatmeal (or 1/2 cup of flour) 1/4 tsp vanilla Large handful of sliced almonds (optional) Dash of salt 1-2 Tablespoons of chia seeds (optional—If you use chia seeds in the waffle mix you will need to add some milk or it will be too thick.) Chocolate chips (optional) Butterscotch chips (also optional, but somewhat less optional than chocolate chips) Steps: 1. Blend in blender and make waffles out of it. 2. Refrigerate leftover batter and make new waffles the next day. I do NOT accept sponsorships.
