Here's a delicious recipe for Baingan Ka Bharta, a popular Indian dish made with roasted eggplant: Ingredients: 2 large eggplant (baingan) 2 tablespoons oil (preferably mustard or vegetable oil) 1 teaspoon cumin seeds 1 medium onion, finely chopped 2-3 green chilies, finely chopped (adjust to taste) 1 inch ginger, chopped 3-4 cloves garlic, roasted 2 medium tomatoes, roasted chop 1/2 tbsn turmeric powder 1/2 tbsn red chili powder (adjust to taste) 1/2 tbsn coriander powder 1/2 tbsn garam masala Salt to taste Fresh coriander leaves, chopped (for garnish) Instructions: 1. *Roast the Eggplant , toamato , garlic:* Preheat your oven to (180°C) or use an open flame on a gas stove. Pierce the eggplant with a knife in several places and insert garlic cloves into it and roast it until the skin is charred and the flesh is soft (about 30-40 minutes in the oven or 10-15 minutes on the flame). Once roasted, let it cool, then peel off the skin and mash the flesh. Set aside. 2. *Prepare the Masala:* Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until transparent Add green chilies, tomato paste Sauté for a couple of minutes until fragrant. 3. *Add Spices:* Stir in turmeric powder, red chili powder, and corianderpowder . Cook for a minute. Add the mashed eggplant to the pan and mix well with the masala. Cook for about 5-7 minutes on low heat, stirring occasionally. 4. *Finish Up:* Sprinkle garam masala and mix well. Adjust seasoning if needed. add chopped ginger, chopped red onion fine chop and chopped fresh coriander. Garnish with fresh coriander leaves and tomato wedges.
